I really was aiming to make beautiful vegan crepes… I’ve made them before, a couple years ago. I followed an online recipe, tried and true, a couple ingredient replacements, and it ended in a gooey puddle of disaster.
Thinking it may be the pan and the new inductor range with temperature settings instead of knobs… I went to Walmart for a late night purchase of this cast iron pan. 10pm last night, this is what I got… another gooey puddle of disaster:
Do you know how good my place smelled last night with coconut oil and blueberry crepes cooking? Savory good, triggering the craving to a new level.
No matter the temp or the attempts, I threw it all away and didn’t get a taste.
Today I got my gumption back, scrubbed the pan and tried a new gluten-free flour package and the recipe on the package… I’ve used this before, it’ll be good. Just swap out the egg whites for flax seeds and it’s vegan.
Here’s the progress with Day 2:
Hmmm… not binding, but they’re browning… ok… maybe I’ll pour it all in, cover it and get one big pancake, great idea. If I pour it all in and it doesn’t set, I can scramble it.
I’ll increase the heat and hold the cover near it, like an oven effect. Hmmm… bubbling, losing liquid, progressing, test the bottom… nope… no binding… Patience gone, it’s time to scramble my crepes.
I can see this outcome like the Volcano erupting on the Big Island today… as either a disaster… or a creation. I’m hungry. Here’s the results of my determination:
